Teriyaki Chicken Stir-Fry

Ingredients

5 Maple Lodge Farms Teriyaki Chicken Breasts
2 tbsp (30 mL) light oil
1/3 cup (75 mL) button mushrooms, sliced
1/2 red onion, thinly sliced
1 sweet red pepper, sliced
4 tbsp (60 mL) chopped fresh cilantro
1/2 cup (125 mL) bok choy, sliced
1/3 cup (75 mL) baby corn, cut into strips
4 tbsp (60 mL) each: chicken stock and soy sauce2 tbsp (30 mL) sesame oil
Salt and pepper, to taste
Sesame seeds
20 oz (600 g) Steam fried noodles, soaked

Directions

1. Slice Maple Lodge Farms Teriyaki Chicken Breast into thin strips and sauté in large skillet with oil, over medium heat, until fully cooked.
2. Add mushrooms, red onion, red pepper and cilantro and continue to sauté for 2 to 3 minutes,
3. Toss in bok choy and corn. Add chicken stock, soy sauce and sesame oil. Let simmer for about 1 minute.
4. Heat noodles in simmering water, drain completely and toss in with chicken and vegetables. Season with salt and pepper. Garnish with sesame seeds.
